Quick and Easy Pita Pizza

We have our lovely nieces staying with us and they wanted me to show them some quick and easy plant based (vegan) recipes that they might be able to take home with them to the farm.I chose flat bread for this as a packet of flat bread contains enough for up to 5 pizzas, is relatively cost effective and is a quick and easy pizza base for kids to use rather than making or buying their own.

The girls told me they usually have little in the way of vegetables on their pizzas and mostly meat and cheese but they loved this high veg, no cheese pita pizza, that is not only simple for the girls to make on their own but also totally delicious for the whole family!


Pita or any type of flat bread (2 generally feeds us two adults and our 3 year old, 4 fed the five of us tonight)

Tomato Paste (1 1/4 small jars)

Dried Basil

Fresh Basil (large handful washed and roughly chopped)

Handful of Cherry Tomatoes (diced)

Handful Kalamata Olives (pitted and sliced)

Handful Green Olives (pitted and sliced)

2 Dutch Cream Potatoes (peeled, thinly sliced and steamed or boiled)

1 small Sweet Potato (peeled, thinly sliced and steamed or boiled)

Large Handful Fresh Baby Spinach (washed and sliced)

Small amount sundried tomatoes (sliced)

1/2 Red Capsicum diced

1/2 Zucchini (thinly sliced)

5 or 6 Field Mushrooms roughly chopped

Olive Oil – (light drizzle)

Freshly Squeezed Lemon Juice

1 large Avocado (cubed)


Peel and cook potatoes and sweet potatoes and drain.

Preheat oven to 180 degrees celsius.

Spread flat bread with even amount of tomato paste and sprinkle with Basil or Oregano. Apply toppings evenly over pizza bases, and drizzle with a small amount of Olive Oil (leave Spinach, Avocado and Basil till pizza has been taken out of the oven).

When cooking with kids, I place all the ingredients in small bowls and let them choose their own toppings as I’ve found this is an almost gaurantee they will eat it. 

Place pizzas in oven for between 5 to 10 minutes or until edges have become crispy and brown. Remove, garnish with Spinach, Basil and a good amount of fresh Lemon juice.

Slice and Enjoy!
