This dish is pretty much raw (aside from some Maple Syrup), it is easy to make, adapt and it’s delicious!
1 Banana (for the split)
1 Passion Fruit
3 Frozen Bananas
1 Tbsp Maple Syrup
2 tsp Vanilla Extract
1 Tbsp Vanilla Rice Protein Powder
1/4-1/2 c Coconut Water
Blend frozen bananas in high speed blender with vanilla extract, protein powder and maple syrup. Add Coconut water slowly until you reach the consistency of soft serve ice cream (you may need a little less or more coconut water depending on your blender).
Slice fresh banana and place on plate. Add two dollops of ‘nice cream’ to the top of the sliced banana.
Add 5 strawberries to the blended ‘nice cream’ and blend again to make strawberry. Add one scoop to centre of banana split.
Slice the remaining strawberries and place on top.
Serve with passionfruit either left whole or dolloped over the top.
(You can totally add Raspberries, Blueberries, Goji Berries, Mango – basically any fruit you love can go on this dish. Along with nuts, and any other toppings you’d prefer. It’s so easy to adapt!)
