My husband brought back some new tempeh from his trip to the grocery store this week and I couldn’t wait to try it (this was found at Leo’s Supermarket in Hartwell Victoria)!
So tonight I whipped this dinner up and we all agreed it was the best thing I’ve made in ages!
None of us wanted our plates to end!!
So here is the recipe for you to enjoy! xx Corinne
Ingredients for Rice
1.5 cups Steamed White Rice
1/4 cup Sesame Seeds – dry toasted
1 dessert spoon – Sushi Rice Vinegar
1 Tsp – Sesame Oil
3 Spring Onions chopped – Green parts discarded
Himilayan Sea Salt and Pepper – to your taste
Drizzle of Tamari to your taste
Mix all of these ingredients together.
Scoop rice into a bowl and serve with (these portion sizes are to feed 4 people):
1/3 medium red capsicum – thinly sliced
1.5 cucumbers – thinly sliced
1/2 medium carrot thinly sliced
1 Avocado sliced
Byron Bay Tempeh – Fresh Fava Bean and Wakame – thinly sliced and shallow fried (could replace with any tempeh or even firm Tofu) – shallow fried in Rice Bran Oil or your preferred oil.
1 bunch broccolini – add 1/2 inch of water to saucepan with Broccolini and boil for 1 minute.
Serve with a very light drizzle of Sriracha hot sauce (if you like a bit of heat)
Pickled Ginger – As much as you like to eat.
Saurekraut – As much as you like to eat.
Drizzle of Sesame Oil
Big Squeeze of fresh Lemon.
