Lactation Biscuits

When I was a new breastfeeder several years ago, I was concerned about my milk supply. When you have a teeny baby so completely reliant on your body for their sustenance, you become utterly terrified that you might let them down, that for some reason, your body might not make enough milk.

I stumbled upon Pinky McKay's Boobie Bikkies and wanted to make something similar for myself.

These ones here, are the version that I make for friends but for low fat vegans I omit the coconut oil and replace with apple sauce.

These make a wonderful gift for new mums. :-)

Ingredients

2 and 1/4 cups Oats

4 tbsp ground Flaxseeds

1 and 1/4 cups Coconut Sugar (decrease if you prefer less sweet)

1/2 tsp Baking Soda

Pinch Sea Salt

1 tbsp Chia Seeds

1/4 cup Brewers Yeast

1/2 cup Water

2 mashed bananas

2/3 cup Vegan Chocolate Chips (omit if wanting low fat)

Method

Preheat oven to 180 degrees and line baking trays with baking paper.

Blend two cups of the oats into a fine powder in your food processor. Combine all dry ingredients except the ground oats and chocolate chips, in a large bowl and stir until combined. Add wet ingredients and gradually stir through ground oats and chocolate chips until a dough forms.

Spoon dollops of the dough onto your baking paper around two inches apart and use a spoon or fingers to flatten the biscuits.

Bake at 180 degrees for 10 - 12 minutes or until golden brown at the edges.

Allow time for the biscuits to cool prior to taking them off the baking paper or they might crumble.
