Simple & Delicious Oat Cookies
I haven't posted a recipe in about a hundred years because I throw together my recipes and I can never remember how much of everything I used and my kids are always there when I'm cooking which makes it a nightmare (said with love for children everywhere, including my own! ;-)), BUT! I LOVE these biscuits for lunch box fillers, tummy fillers, grab-on-the-run snacks and they are super easy to make, even with kids fighting and destroying your kitchen at the same time, so I thought I'd share them here with you!
According to the internet I need to give you an essay worth of back story on these cookies prior to posting the recipe while you think to yourself 'All I wanted was a quick biscuit lady, not your life story, cut to the chase!' Or is that just me?..
Anyhoo, I'm a Sagittarius and ain't no body got time for that, so just make them and eat them and enjoy! :-)
1 and ½ cups oat flour
2 tbsp ground flaxseeds
2 tbsp filtered water
1 cup whole oats
½ tsp baking soda
½ tsp baking powder
pinch of salt
2 tsp cinnamon
½ tsp vanilla extract
½ cup maple syrup
1 and a ½ bananas mashed
1 tbsp apple cider vinegar or lemon juice
Preheat oven to 180 degrees celcius.
Combine ground flaxseeds and water in small bowl and set aside until thickened.
In large bowl combine all dry ingredients, once mixed add remaining ingredients and mix well but don’t over mix.
On lined baking tray, spoon tbsp amounts of mixture and flatten these with a fork.
Bake for 8 to 12 minutes or until they reach your preferred level of golden and chewy deliciousness.
Let cool before eating (if you can ;-) )
