This pasta is inspired by my older brother, who makes delicious pasta bowls filled with every single vegetable he can find, effortlessly thrown together. He does the same with 'risottos'. Masterchef would not approve but they are definitely tasty and good for what ails ya.Read More
So it’s been three weeks since I gave birth to my son Theo and this is my first thrown together recipe. During the last trimester of my pregnancy I found it difficult to post regularly, whilst managing my three year old son (and my own brain fog) and in these early days I am still finding my feet and figuring out this new little person who has entered our lives. This recipe was thrown together, like many of my dinners, with whatever we had lying in the bottom of the fridge. Tonight I whipped up this for dinner, as I have been having a love affair with chickpeas for the past week and wanted to use up the kale I had brought at the market. I love all things lemon, so I added an entire lemon to the sauce to give it that tangy-lemon-awesomeness that I love. This recipe is full of protein and iron and other minerals and nutrients and is so simple to make.
Hope you enjoy it! xx
So Iggy has been obsessed with Kung Fu Panda recently, we don’t watch very much commercial television in our home but we do allow the occasional movie (this has become more than ‘occasional’ since I’ve been pregnant…).
So when I made this dish for Iggy he called them ‘Kung Fu Panda Noodles’ and he LOVED them!
They are tasty, simple and delicious which is what I love!
