Notella Overnight Oats

Notella Overnight Oats

I have heard so much about overnight oats recently and as I long-term smoothie lover, I couldn't see how any other breakfast could ever win my heart, until this beautiful friend came along...

I wanted to make something Iggy, Theo and I would love, that had the nutrient punch I expect from my morning smoothie, but that would taste even more like a luscious dessert!

Super Hero Balls

Ok, so these are very very similar to my Low-Fat, Nut-Free Bliss Balls but people were keen for the recipe so I told them I'd post it and haven't gotten around to it because - kids. ;-)

I'm on a little role tonight, so here they are for you!

They are 'Super Hero Balls' purely because Iggy loves all things 'super hero' and they are filled with 'SUPER' foods!!

Ingredients

12 pitted medjool dates

1 tbsp raw vanilla protein powder

2 tsp mesquite powder

2 tsp maca powder

1 tbsp chia seeds

1 1/2 cups oats

1 cup dried apple

1/2 cup goji berries

Method

In high speed blender, blend oats and apple on high speed for around 3-4 seconds, add in remaining ingredients and blend until well combined and able to be formed into balls. I added some extra roughly chopped dates to this mixture for some extra chewy, sweetness.

I like to keep mine in the fridge so they are firmer, or in the freezer to keep them for longer, but sadly, mine never last longer than a day or two as I am a total fiend for balls. ;-) (can barely keep a straight face typing that!)

Enjoy!

** Reminder ** When consuming a lot of chia seeds, dehydrated foods and powders - drink a lot of water to replace the water from within your body that is being used for re-hydrating these foods for digestion.

Low Fat Gluten Free Hearty Veg Pasta

Low Fat Gluten Free Hearty Veg Pasta

This pasta is inspired by my older brother, who makes delicious pasta bowls filled with every single vegetable he can find, effortlessly thrown together. He does the same with 'risottos'. Masterchef would not approve but they are definitely tasty and good for what ails ya.

Pearl Barley Thrown Together Soup

Pearl Barley Thrown Together Soup

So it’s been three weeks since I gave birth to my son Theo and this is my first thrown together recipe. During the last trimester of my pregnancy I found it difficult to post regularly, whilst managing my three year old son (and my own brain fog) and in these early days I am still finding my feet and figuring out this new little person who has entered our lives. This recipe was thrown together, like many of my dinners, with whatever we had lying in the bottom of the fridge. It is tasty and full of goodness for young people, old people and breast feeding mamas like myself
